Baked Moin-Moin.

Living abroad but still craving Nigerian food, over the years, I have made do as best as I can. Moin-Moin is an all-time favorite. When I lived in Lagos, it was our Saturday breakfast food: ogi and moin-moin, oh that evokes some splendid memories. Moin-Moin is traditionally made in banana leaves – a bit hard to find when you are out of the country. I recently stumbled on a recipe where you can bake moin-moin in muffin pans and it turned out deliciously yummy.
